Wood Barrel Aged Balsamic

A superior young balsamic vinegar, with a rich brown color and a slightly woody bouquet with a tart finish. It is quite dense and clings to the food on which it is drizzled. We recommend this product, especially with raw fruits and vegetables to bring out the fresh flavor of earth's bounty. It is also served with pieces of parmigiano reggiano and taleggio cheeses, a favorite local dish in Modena.

Available in 250ml, 8.5 fl.oz.

The tart finish on this is what got me — it's bold enough to cut through sharp cheese without tasting harsh. Really dense too, so a little clingy drizzle goes a long way on roasted vegetables.

I drizzled this over a Caprese salad and the tart finish cut right through the mozzarella. It's denser than the supermarket balsamic I usually buy, almost syrupy, and that woody note is subtle but there. Genuinely surprised how much better this tastes.

The way it clings to whatever I pour it on is honestly my favorite part—thick enough to coat a spoon but still pours smooth. That woody aroma comes through right away and the tart finish balances the sweetness perfectly. I've been finishing bottles of cheap vinegar twice as fast since I switched to
